Day 5 of 25 Days of Christmas: Cookies For Santa (Dirty Snowball Cookies)

These classic Christmas time cookies go by a few different names, and are enjoyed year round, but their resemblance to snowballs make them a festive holiday favorite. The recipe normally calls for almonds or pecans, but my version involves using pistachios as well as a white chocolate drizzle. Ps. I only call them Dirty Snowballs when I have extra pistachios to sprinkle over the top. 😋

What you’ll need:

  • 1 1/2 cups softened butter
  • 3/4 cup powdered sugar
  • 3/4 tsp salt
  • 1 1/2 cups roughly chopped pistachios
  • 4 1/2 tsp vanilla extract
  • 3 cups sifted all purpose flour
  • 1/3 cup powdered sugar for rolling
  • 1 cup white chocolate chips for melting and drizzling (I used Ghirardelli white chocolate melting chips)

what to do: 

  1. Preheat oven to 325°F
  2. Cream butter in a large bowl and gradually add powdered sugar and salt, and mix until creamy and smooth
  3. Add nuts and vanilla
  4. Gradually mix in flour
  5. Roll dough into 1 1/2 inch balls, and place 1 inch apart on an ungreased cookie sheets
  6. Bake for 15-20 mins and let cool until just warm
  7. Roll in powdered sugar
  8. Melt white chocolate chips (I microwaved them on 50% power for 30 seconds, stirred, and then hit it twice more at 10 seconds a time and stirring in between each heating)
  9. Dip cookies in the white chocolate or drizzle it over the top and then sprinkle with extra pistachio crumbs
