Day 20 of 25 Days Of Christmas: Standout Holiday Pies (Marshmallow Mermaid)
The last pie in the series is the “Marshmallow Mermaid Pie” from the movie “Waitress”. It’s a colorful marshmallow pie that Dr. Pommater proclaims to be, “Biblically good,” when Jenna gives it to him at her doctor’s appointment. Like almost anyone who’s seen the movie, I’ve always wanted to make this pie, but for some reason I’m just now getting around to doing it. There are actually quite a few versions of this recipe floating around the web, but I wanted to make the actual pie from the movie. Here is the recipe for “Marshmallow Mermaid Pie” that came with the DVD.
What you’ll need:
9 raham crackers
1/2 cup toasted coconut flakes
5 tbsp butter, melted
34 large fruity marshmallows (get a 10 oz bag and save the rest for topping)
1/2 cup whole milk
1 1/2 cups heavy or whipping cream
1 1/2 oz grated unsweetened chocolate
What to do:
*Preheat oven to 375°F
Process graham crackers and coconut flakes in a food processor until texture is crumbly.
Pour butter into graham cracker coconut mixture and evenly blended before pressing into a 9 inch pie pan (or 4 mini pot pie tins) and bake for 10 minutes. Once it’s finished baking remove from oven and transfer to cooling rack. Allow if to cool off completely.
While crust is cooling down combine milk and marshmallows in a 3 quart sauce pan and melt over low heat until consistency is smooth, stirring constantly. Remove from heat and let it cool off completely.
Using a large bowl, whip the cream until stiff peaks form.
Pour grated chocolate and cooled off marshmallow mix into the whipped cream and fold together to mix.
Spoon filling into cooled crust and refrigerate for at least 3 hours or overnight.
