Day 17 of 25 Days of Christmas: Standout Holiday Pies (Pumpkin Cheesecake on Gingerbread Crust)

Day 17 of 25 Days of Christmas features my take on the pumpkin cheesecake. I wanted to include it in the pie series here because both sides of my family are obsessed with it, but I felt like giving it a little something extra. It’s decadent and delicious all on its own, but I wanted to have some fun with it by adding a festive touch. All I really did was switch out the crust for a gingerbread mixture and add some extra spices, but — let me tell you — it is the perfect extra something I was looking for! Wow everyone with this Pumpkin Cheesecake on a Gingerbread crust…or save it for yourself! Read below for the recipe.

What you’ll need:

For the crust

  • 3/4 cup gingersnap crumbs

  • 1/2 cup graham cracker crumbs

  • 3 tbsp brown sugar

  • 1/2 tsp ground cinnamon

  • 1 stick of butter, melted

For the filling

  • 3 (8oz.) packages of cream cheese, at room temperature

  • 1 (15oz.) can of pureed pumpkin

  • 3 large eggs + 1 yolk

  • 1/4 cup sour cream

  • 1 1/2 cups granulated sugar

  • 2 tbsp all purpose flour

  • 1/2 tsp ground cinnamon

  • 1/8 tsp ground nutmeg

  • 1/8 tsp ground clove

  • 1/8 tsp pumpkin spice

What to do:

*Preheat the oven to 350ºF

Make the crust

  1. Mix the gingersnap crumbs, graham cracker crumbs, brown sugar, cinnamon, and melted butter in a medium bowl until thoroughly blended

  2. Press into 9 inch pie tine or springform pan

  3. Cover with foil and set aside

Make the filling

  1. Whip cream cheese until it is super smooth and creamy in consistency (I did not do this thoroughly and there are little visible chunks in mine)

  2. Add pureed pumpkin, eggs + yolk, sour cream, sugar, flour and spices to cream cheese and blend well

  3. Pour over crust and bake at 350ºF for 1 hour

  4. Remove from oven and let sit for 20 minutes

  5. Refrigerate for 4 hours
